用料:面粉170克,鸡蛋3个,葱花、盐、油、开水各适量;漏斗一个;
做法:
1.面粉中加入少许盐拌匀,倒入适量的开水烫熟,用筷子搅拌成没有干粉的雪花状,稍凉一些后用手将其揉成光滑的面团,盖上保鲜膜饧30分钟;

2.鸡蛋打散成蛋液,放入葱花与适量的盐,搅拌均匀;(右图那个就是漏斗了哈,一般的生活超市都有得卖的);

3.饧好的面团放在案板上揉搓成粗条,再平均分成六个小剂子;

4.将小剂子按扁,撒上少许面粉后用擀面杖擀成约0.2厘米厚的面皮,面皮的边缘稍稍擀薄一些;
5.每两张面皮为一组,在其中一张面皮的中央刷上少许油,边缘部分涂上少许水,注意边缘 要留出一小块的地方不要涂水(插漏斗用);
6.然后用另外一张没有涂油和水的面皮将涂好油和水的面皮盖起来(两张面皮擀得不是一样大?没有关系,将多余的部分用刀子切掉就可以了,咱这不是菜鸟么!),边缘部分用手指按紧(没有 涂的那一小块地方不要按哦,最好是将其掀起来一点,以免等一下找不到了哈),依此方法将六张面皮做成三个饼胚;

7.平底锅内用刷子刷上少许的油,将做好的饼胚放入(不要开火哦,不然会烫手滴),然后将漏斗从饼胚边缘预留的那个小口伸进去;
8.将适量的蛋液倒入漏斗中,待蛋液完全灌入饼胚中后小心地将漏斗抽出,再将小口捏紧收口;

9.此时可以开火了,锅中再加入少许的油,小火将鸡蛋灌饼煎黄一面后翻面,最后煎至两面金黄中间鼓起熟透后舀出切件装盘即可.

经验分享:
1.和面时水要慢慢地分次加入,一边加水一边用筷子搅拌,以便更好地掌握用水量;
2.饼胚的边缘一定要按紧,以免蛋液会流出;最好是像我这样先将饼胚放在锅子里再灌入蛋液,如果事先灌好蛋液再下锅的话饼胚 在移动的途中蛋液很容易流出来;
3.在用漏斗灌蛋液的时候,面皮与漏斗接触的地方要用手捏紧(俺是因为要腾出手来拍照,所以手没在那个该在的地方哈,真正 灌的时候俺的手是捏住滴),以免蛋液从小口中流出来;
4.葱花要尽量切得细一些,以免会堵住漏斗;
5.烙饼的时候火不要太大,以免烧焦.
